What is the reason behind Wolverine’s adamantium bones not being able to heal with his powers?

Wolverine’s adamantium somewhat slows down his healing factor or makes his healing factor less effective since metal bones poison his body. The benefits outweigh the negatives here, as it allows him to fight beings that would normally be above his capabilities—for example, The Hulk.

Imagine Sabretooth trying to fight the Hulk; he’s Wolverine with a better healing factor but no Adamantium. The Adamantium gives Wolverine the edge he needs to fight all sorts of paragon-level brutes who usually have an absurd amount of resistance to being punctured.

In the comics, Adamantium, if sharpened, can cut through almost anything with few exceptions.

The major drawback to Adamantium coating his bones is that if his healing factor is ever overtaxed, the adamantium poisoning can temporarily overwhelm him. He’s normally bedridden until his healing factor slowly builds back up to normalcy. But it’s generally understood that his healing factor is always working on preventing adamantium poisoning.

In some future stories, it’s usually how he meets his end. Due to his healing factor, he finally becomes so overtaxed that he eventually stops working up to the point where he’s just living on borrowed time.
